These oatmeal biscuits are soft, chewy, and full of banana flavor! The recognizable cozy spices and plump raisins make these much more irresistible. They'll keep for a minumum of one week if stored in an airtight container in the fridge --if they last long!
1 cup (100g) instant oats (gluten-free if necessary and measured like that )
3/4 cup (90g) whole wheat or fermented * flour (measured like that )
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup (120mL) pure maple syrup
In a medium bowl, whisk together the yogurt, milk, baking powder, cinnamon, and salt. In a separate bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Add the flour mixture, stirring only until incorporated. Fold in the raisins.
Preheat the oven to 325°F, along with a baking sheet with a silicone baking mat or parchment paper.
Using a spoon and spatula, drop the cookie dough into 15 rounded scoops on the sheet, and apply to the desired thickness and width using The Best Healthy Cookie Recipes Shape Magazine a spatula. Bake at 325°F for about 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It's extremely important to quantify both the oats and flour properly employing this technique or a kitchen scale. (? That is the one I have and love!) Too much of either would dry out of the cookies and abandon them cakey rather than chewy.

To create your own, add the same quantity of old-fashioned yogurt into your food processor, and pulse 10-12 days or until the oats are about 1/4 to ? of the original size.
For the gluten-free flour, I suggest the following mix: 1/2 cup (60g) millet flour, 2 tablespoons (15g) tapioca flour, two tbsp (15g) brown rice flour, as well as 1/2 tsp xanthan gum. Most store-bought gluten-free flour blends (like this one!) Will also do the job, if quantified like this.
